Dad’s Stuffed mushrooms












Got this from Dad today, sounded interesting and so tried it out.  Not bad at all if I may say so.

I used large Portobello mushrooms cleaned and stalk removed.

For the stuffing you can chuck in anything you like, just whizz it up in a processor.  I used

  • Large red chilli,
  • bunch of coriander
  • parsley
  • garlic
  • spring onions
  • ginger
  • lemon zest
  • grated cheddar
  • breadcrumbs

Mix all the ingredients with some olive oil and a can of crab meat.  Stuff the mushroom with the mixture and sprinkle with more cheese.

Bake in the oven for 15-20mins until mushies are soft and the stuffing is golden.

Delish !
